The locals know their cheeses so well and a consultation and\u00a0serious discussion usually takes place before a purchase is made.\u00a0 It&#8217;s impressive to observe how seriously they take their food and the pleasures that are derived from tastes and flavours rather than merely demolishing quantities of food for sustenance.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Arial;\"><a title=\"Cheese waiter, France\" href=\"http:\/\/www.travelsignposts.com\/Destination\/v\/France\/Chamonix\/France_Helen_0641.jpg.html\" target=\"_self\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright\" style=\"float: right; border: 0; margin: 5px;\" src=\"https:\/\/i0.wp.com\/www.travelsignposts.com\/Destination\/d\/29560-2\/France_Helen_0641.jpg?resize=85%2C110\" alt=\"Cheese waiter, France\" width=\"85\" height=\"110\" \/><\/a>When the <a title=\"Cheese tray, France\" href=\"http:\/\/www.travelsignposts.com\/Destination\/v\/France\/Dijon\/France_Helen_0546.jpg.html\" target=\"_self\">cheese tray <\/a>is brought out in a restaurant, the cheese waiter, almost the equivalent of a <em><a title=\"Cheese waiter, France\" href=\"http:\/\/www.travelsignposts.com\/Destination\/v\/France\/Chamonix\/France_Helen_0641.jpg.html\" target=\"_self\">sommelier<\/a><\/em>,\u00a0will ask you a few questions about the types and strength of cheese you prefer and then recommend a few cheeses for you, and you have to eat the cheese in a certain order &#8211; somewhat like\u00a0a vertical tasting in wine.\u00a0 Again, we were so impressed at their skill and knowledge.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Arial;\"><a title=\"Cheese selection, France\" href=\"http:\/\/www.travelsignposts.com\/Destination\/v\/France\/Dijon\/France_Helen_0547.jpg.html\" target=\"_self\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft\" style=\"float: left; border: 0; margin: 5px;\" src=\"https:\/\/i0.wp.com\/www.travelsignposts.com\/Destination\/d\/29231-2\/France_Helen_0547.jpg?resize=110%2C85\" alt=\"Cheese selection, France\" width=\"110\" height=\"85\" \/><\/a>Well, back home where\u00a0our range now seemed to have shrunk by comparison to what we experienced in France, I have a few favourites, one of these being Roquefort, which\u00a0is probably one the world\u2019s greatest blue cheese.\u00a0\u00a0Stilton and Goganzola lovers may beg to differ.\u00a0 It is produced entirely from the milk of ewes and the ripening of the cheese\u00a0takes place\u00a0in the natural damp, aired caves found under the village of Roquefort-sur-Soulzon.\u00a0 Apparently a similar cheese to Roquefort existed in Roman times, and was mentioned by Plinius in the year 79 .
